Shepherd's pie!

This is really
evilbeej's fault, since she was the one who mentioned shepherd's pie while I was at work yesterday and got me craving some. What I really wanted was the shepherd's pie they make at McGuire's - along with some of their home-brewed root beer - but since that's a bit far to swing by for dinner after work, I settled for attempting to make some myself. Shepherd's pie, that is, not root beer.
This is what I ended up with.
Peel and quarter about three large potatoes (I used golden) and boil for about twenty minutes in salted water or (what I used) equal parts water and chicken broth.
While the potatoes are boiling, chop one onion; melt half a stick of butter in a skillet and saute the onion in it until tender.
Add to the onion a pound and a half of ground beef; brown the beef, then add a cup of Guinness, a few liberal splashes of Worcestershire sauce, and a few dashes of pepper according to your preference. Simmer it all down.
When the potatoes have boiled enough to be tender, mash them with the other half of the stick of butter, a couple splashes of milk, and a bit of garlic according to taste.
Pre-heat your oven to 400 degrees.
Once the beef has simmered down sufficiently, layer it evenly in the bottom of a casserole dish. Cover it with a layer of your choice of vegetables (I used corn, some carrots, and some peas, already steam-cooked). Cover that with the mashed potatoes.
Bake at 400 degrees for about twenty minutes, then cover the top generously with grated cheese (I used cheddar) and switch to the broiler long enough to melt the cheese completely.
Failing the availability of home-brewed root beer, serve with a chilled bottle of the commercial root beer of your choice. (Mine was IBC.)
I still feel stuffed this morning. Mmmm.
